(because it’s a bit crunchy like a cookie, I’d like to call these Muffin/Cookies = Muffkies )
I’ve made this recipe 4 times in the past month and it’s really stellar. I’ve modified it a bit by adding pecans and found an easier way to create them. I’ve placed them in a mini Muffin tin. Totally works out since these are highly addicting and having them a bit smaller it somehow makes you feel less guilty, lol. This is a fun one to make and MMmmm, imagine them on vegan soy ice cream, YUM… OOOHH, Vegan Ice cream sandwiches! Wha?!!? Totally going to try that out for sure!
Vegan Oatmeal Rason Pecan Mini Muffins or Muffkies
Adapted from Vegan Cookies Invade Your Cookie Jar (Oatmeal raison cookies)
1/3 cup soy milk
2 tablespoons ground flax seeds
2//3 cup brown sugar
1/3 cup oil
1 teaspoon vanilla
3/4 cup flour
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups quick oats
1/2 cups raisons
1/2 cups pecan
1. Preheat oven to 350
2. Prepare mini muffin tins with baking spray
3. In a large bowl, with a fork mix soy milk and ground flax seeds. Add in sugar and oil and mix for about 2 mins until it looks like caramel. Add vanilla. Sift in flour, spices and salt and mix. Fold in oatmeal, raisons and pecans.
4. Add mixture to the muffin tin (no paper lining needed because you prepped it with a non-sticking spray).
5. Bake for 12min or until all top and sides are golden brown.
